Summer spaghetti with arugula and lemon pesto: the fresh, lactose-free recipe you'll love
Summer is the perfect time to lighten up your cooking. And when the heat kicks in, you need ideas that are fresh, quick, and light. If you are lactose intolerant, finding the right combination of taste and well-being can seem complicated. But don’t worry: today we are bringing a first course to your table that is surprisingly simple and full of flavor.
These spaghetti with arugula, almond, and lemon pesto are a modern alternative to traditional pesto, perfect for those following a plant-based or dairy-free diet. You will be won over by their natural creaminess, the aromatic note of lemon, and that slightly bitter touch of arugula that makes them... irresistible.

Let's take a look at the recipe:
Ingredients for 2 people
To make this recipe you only need a few ingredients, all easy to find and 100% plant-based:
-
180g gluten-free spaghetti (made from corn, rice, or legumes)
-
50g fresh arugula
-
30g peeled almonds
-
1 organic lemon (we will use the juice and zest)
-
3 tablespoons extra virgin olive oil
-
One garlic clove (optional, for a bolder touch)
-
Salt and pepper
- Pasta cooking water (as needed for emulsifying)
Preparation
Start by cooking the pasta in plenty of salted water. Meanwhile, prepare the pesto. Simply blend together the arugula, almonds, extra virgin olive oil, the juice of half a lemon, and, if desired, a clove of garlic. Add salt and pepper to taste. If the mixture is too thick, you can thin it out with a few tablespoons of the pasta cooking water: it will help you achieve a perfectly creamy consistency without using any dairy.
When the spaghetti is al dente, drain it and toss it immediately with the pesto. Mix well and brighten with the grated lemon zest. The result? A first course with a fresh, citrusy, and surprisingly balanced flavor.
The extra touch
If you want to make it even more interesting, you can add confit cherry tomatoes, desalted capers, or toasted pine nuts. But even in its basic version, this dish is easy to love for its simplicity.
