Have you ever eaten a raw vegan vanilla and berry cheesecake? No? Today is the day. Follow the instructions, prepare this delicious dessert, and enjoy its extraordinary flavor. This cheesecake is also lactose-free and gluten-free.

INGREDIENTS
- 3 ½ cups raw cashews (soaked overnight)
- 1 cup water
- ¾ cup fresh apple juice
- ½ cup coconut oil
- ½ cup lemon juice
- 2 vanilla beans, scraped
Crust:
- 1 ½ cups raw macadamia nuts
- ¾ cup raw pecans
- ¾ cup shredded coconut
- 10 pitted dates
- ¼ teaspoon salt
Topping
- 1 cup raspberries
- 1 cup blackberries
- 1 cup blueberries
- 2 tablespoons fresh apple juice
INSTRUCTIONS
- Place all the crust ingredients (and ½ cup of the shredded coconut) into a food processor. You will then use the remaining ¼ cup of shredded coconut. Continue until the ingredients are blended to your desired consistency.
- Sprinkle the remaining ¼ cup of shredded coconut on the bottom of a round pan. This helps prevent the cheesecake from sticking to the bottom. Place the crust mixture in and gently flatten it with your fingers.
- For the cheesecake filling, place all ingredients into a high-speed blender. A high-speed blender makes the filling creamy and smooth, but you can also use a food processor. Blend for a minute or two until it becomes thick and creamy.
- Pour the filling over the crust. Gently shake the pan to remove any air bubbles. Now, place the pan in the freezer for 30 minutes.
- Place all the topping ingredients into your food processor (after cleaning it) and pulse for 30 seconds. Then, set aside until the cheesecake has set.
- After 30 minutes, the cheesecake should be firm enough to add the topping. Gently spread the berry mixture on top and place it back in the freezer. Freeze the cheesecake for at least 4 hours before serving.
- When you are ready to serve the cheesecake, remove it from the freezer at least 20 minutes before eating. This will make it much easier to slice. Garnish with fresh berries and enjoy your cheesecake!
