Gingerbread cookies are a classic Christmas treat. A lovely idea is to bake the cookies and decorate them with your family or friends to spend time together and have fun while it's cold outside.
You can also prepare them, put them in a beautiful decorated box, and give them as a gift. If you like, you can attach a colorful ribbon to the cookies and hang them on the Christmas tree.
There will surely be a wonderful smell in the kitchen while you prepare these cookies because the ingredients include cinnamon and cloves. Now I will tell you all the ingredients and the preparation.

Ingredients
For the cookies
- 260 g unsalted butter
- 160 g powdered sugar
- 160 g honey
- 2 medium egg yolks at room temperature
- 600 g all-purpose flour
- 4 teaspoons baking soda
- 1/2 teaspoon salt
- 4 teaspoons ground ginger
- 4 teaspoons ground cinnamon
- 4 teaspoons ground cloves
For the royal icing
- 2 egg whites
- 300 g powdered sugar
Preparation
- Place the flour and cold butter in a food processor and pulse for a few seconds. Then add the honey, powdered sugar, egg yolks, and spices. Pulse until the ingredients are combined. Transfer the dough onto a work surface and knead until smooth. Shape the dough into a brick and wrap it in plastic wrap.
- Let it rest in the refrigerator for three hours.
- Afterward, roll out the dough on a floured surface. You should get a sheet half a centimeter thick. Have fun using cookie cutters to cut out the shapes.
- Bake at 180°C (356°F), placing the cut dough on parchment paper, and bake for 15 minutes. When done, take them out of the oven and let the cookies cool.
- Now prepare the royal icing by whisking the egg whites at room temperature, and while they are beating, add the powdered sugar a little at a time.
- Once the royal icing is ready, if you prefer, you can choose to color a portion with food coloring.
- The recipe is vegetarian and calls for butter. If you are lactose intolerant, I recommend taking a high-concentration lactase enzyme tablet to digest the cookies well. You can find this supplement at this link: click HERE
- Now that everything is ready, all that remains is to decorate the cookies however you like. In the photo, you can see some Christmas decorations to inspire you.
Store your cookies in a lidded tin box in a cool, dry place until you are ready to eat them and share them with your loved ones.
Merry Christmas!
